Apple Fritter Loaf
2 apples, peeled and diced
2 eggs
2 cups plain flour
1/2 cup sugar
75 gm butter or 1/2 cup refined oil
1 tspn baking powder
1/2 tspn baking soda
4 tbspn Brown sugar
4 tspn Cinnamon powder

Mix the diced apples with 2 tspn cinnamon powder & set aside. Mix the remaining 2 tspn cinnamon powder with the brown sugar & set aside. Add all the wet ingredients together and mix for 2 minutes. Sift together the flour, baking powder and baking soda. Mix with the wet ingredients.

Grease a loaf pan, pour in half of the batter, layer it evenly with half of the diced apple. Sprinkle half of the brown sugar over this. Repeat the same with the remaining batter.  Bake at 160 degree for 45 minutes or until an inserted tooth pick comes clean.
